My friend and I were talking about Thanksgiving and recipes and food and damn I’m still hungry from that conversation. Here is a cheap and easy side dish for all of you who like sweet, corn or bread, or possibly a combination of all.

Corn Casserole

1 box Jiffy Corn Bread Mix
1 large egg
8 oz. sour cream
1 can creamed corn
1 can whole kernel corn (drained)
1 stick of butter (1/2 c.), melted

Preheat oven to 350 degrees. In a large bowl, beat egg slightly then add all remaining ingredients. Mix until well combined. Pour mixture into a medium sized pan (I used an 11×7 pan; too large and it will cook too fast) and bake for about an hour or until center is firm.
